I travel the globe to select the very finest spirits, vine fruits and seasonal spices, from a stout that is brewed right here in The Peak District to succulent sultanas and currants from Turkey and Greece.

I select the finest French cherries and use tried and tested traditional methods to glacÚ them, repeatedly heating the fruit in a strong syrup and leaving them to stand. Cherries often lose their colour when glacÚd, so many people add food colouring for the red appearance. Not me though, my cherries are 100% natural!
